I know I wrote about this last year about this time, but I just can’t help myself. Right now is the absolute best time to eat cottage cheese! Homegrown tomatoes, cucumbers, green peppers, cantaloupe, honeydew melon, and watermelon all go great with cottage cheese on top. I can eat cottage cheese at all three meals and do so with all the garden veggies available.
I’m on a lowfat diet these days, so we are eating lowfat cottage cheese at my house. Most likely, Mayfield Lowfat Cottage Cheese would be judged by dairy judges as “best in the nation.” It’s not too dry, not too soupy – perfect consistency. Cottage cheese is very high in dairy protein, so it nutritionally complements vegetables very well.
I like a slice of whole wheat toast for breakfast with cantaloupe and Cottage Cheese. For lunch I’ll have a sandwich with tomatoes and cottage cheese. Supper will include some cottage cheese and tomatoes, and dessert might be watermelon and cottage cheese. I guess you can tell I like my garden vegetables with cottage cheese. But it doesn’t stop there -- I drink a glass of Nurture 1% Milk with every meal.
Finally, let me tell you about one of my favorite suppers. I love a grilled hamburger patty. I center it on the plate (no bun) and surround it with tomatoes and cucumbers. On top of this, I load up with lowfat cottage cheese. The cottage cheese flavor blends superbly with both the hamburger and vegetables. A GREAT summer supper!
