Easter is right around the corner and Mayfield has some fun ideas for you to share with your kids this weekend...

Easter Egg Ice Cream Sandwiches

 

Ingredients

½ cup butter (1 stick) softened               

1 cup sugar
½ teaspoon vanilla                                          

1 egg (unbeaten)
2 c. plain flour                                     

¼ teaspoon salt
1 teaspoon baking powder

Coconut Cake Ice Cream

Shaved coconut

 

For the cookies

Cream butter.  Add sugar, then vanilla and egg.  Add flour, baking powder and salt.  Chill several hours or until firm enough to roll.  Roll out on lightly floured board to 1/8 inch thickness.  Cut into shapes.  Bake at 325 degrees for about 8 minutes.  Do not over bake.  Cookies will still be soft.  Let cool and remove from pan. 

 

For ice cream sandwich

·         Spread shaved coconut onto clean surface

·         Place a ½ inch thick layer of Coconut Cake ice cream evenly between two cookies

·         Once the sandwich is together, roll the exposed ice cream in shaved coconut

 

Something more...

·         You can use any flavor of Mayfield Ice Cream and any flavor of cookie to create your kid’s favorite treat:

Ø       Olde Savannah Caramel with chocolate cookies rolled in toffee pieces

Ø       Peanut Butterific with peanut butter cookies rolled in chocolate shavings

Ø       Chocolate Cream Pie with graham crackers rolled in chocolate shavings

 

Easter Basket

Now that you’ve emptied your ice cream carton making these wonderful treats, you can convert it into an Easter Basket. You can serve your other Easter treats in the basket or it’s perfect for kids to take to their egg hunts! It’s super simple – here’s how it works:

 

  • Clean your empty carton
  • Cut the center of the lid out from around the yellow plastic rim
  • Cut the rim and stretch it out and bend it and play around with it so it makes a nice arched handle
  • Punch holes in each end of the rim/handle
  • Punch holes in each side of the carton
  • Attach the handle to the carton with ribbon
  • Fill with goodies!
